Because of Scott’s love for food and his need to be constantly busy, he joined his first professional kitchen at the age of 14. After day one in the dish pit, there was no turning back. Scott spent the next 20 years working in every job restaurants had to offer; from the dish room to the corporate office, and everything in between.

Prior to opening Butcher’s Bistro, he spent 7 years as a Chef, General Manager and Regional manager for Snooze, an AM Eatery. Scott started with Snooze at their first restaurant and helped the company grow to 8 locations.
With the skills he developed over the years, Scott (and partners) started Butcher’s Bistro to fulfill his lifelong dream of creating a unique eatery with the carnivore in mind. With an emphasis on utilizing the entire animal, and sourcing hyper-local produce to create an ever-changing adventurous menu for his guests; you see his passion in all he does.

Scott has been a supporter of Veterans to Farmers (VTF) from day one; that support has extended from food donations for fundraising events, to hosting VTF fundraising events at Butcher’s Bistro. Scott’s grandfathers served in WWII, and through the years he’s actively supported various veteran organizations. With VTF wanting to add a culinary professional to their board, and Scott’s passionate support the veteran population, it was a logical choice for him to join the VTF board of directors and help shape the future of the organization.
